I always love experimenting with cookie recipes. I usually create a base that I like and add different ingredients to make the cookies extra special. Today, I took one of my oatmeal cookie recipes and tweaked it by adding mini chocolate chips and dried cranberries! These cookies are not too sweet but they do have just enough sweetness with a bit of tart. I hope you enjoy the recipe!

Oatmeal Choco-Craisin Cookies

Serves: 24 cookies
Ingredients
  • 1 cup (2 sticks) of unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2/3 cup light brown sugar, firmly packed
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 2/3 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 1/2 cups quick cook oats
  • 1 cup dried cranberries
  • 1 cup mini chocolate chips
Instructions
  1. In a medium bowl, cream butter, granulated sugar, and brown sugar together until smooth.
  2. Add eggs and vanilla, mix until combined.
  3. Add flour, baking soda, salt, and cinnamon, mix until dough forms.
  4. Fold in oats, dried cranberries, and mini chocolate chips.
  5. Cover with plastic wrap and cool in refrigerator for 1-2 hours.
  6. Preheat oven to 350 degrees.
  7. Using a small scoop, scoop the dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes.
  9. Remove from oven and let cool on baking sheet for 3 minutes.
  10. Transfer to a cooling rack to cool completely.

 8 hdc into the magic circle. (8)
Round 2: 2 hdc into each st around. (16)
Round 3: *1 hdc into the next st, 2 hdc into the next st; Repeat from * around. (24)
Round 4: *1 hdc into each of the next 2 sts, 2 hdc into the next st; Repeat from * around. (32)
Round 5: *1 hdc into each of the next 3 sts, 2 hdc into the next st; Repeat from * around. (40)
Round 6: *1 hdc into each of the next 4 sts, 2 hdc into the next st; Repeat from * around. (48)
Round 7: *1 hdc into each of the next 5 sts, 2 hdc into the next st; Repeat from * around. (56)
Round 8: *1 hdc into each of the next 6 sts, 2 hdc into the next st; Repeat from * around. (64)
Round 9: *1 hdc into each of the next 7 sts, 2 hdc into the next st; Repeat from * around. (72)

Start stuffing with fiber fill.

Continue filling with fiber fill until the pillow is round and firm.

Round 26: *hdc dec over the next 2 sts; Repeat from * around. (8)

Fasten off, weave all ends.

Chocolate Chips (Make 7)

Magic Circle, ch 1
Round 1: 6 hdc into magic circle, fasten off, leave long tail for sewing. (6)

Finish:

  • Arrange the chocolate chips around the cookie.
  • Using a yarn needle, sew the chips onto the cookie using the whip stitch method.
  • Fasten off and weave all ends.
