Banana Nutella Crepes

 

Since Kaylee turned two, she’s become a little picky when it comes to food. It’s so hard finding things for her to eat that don’t require too much time and that she actually enjoys. I figured since she likes pancakes she might like crepes too. And what is better than banana and Nutella stuffed crepes? Nothing! They are delicious and super easy to make. Best of all, you can make the batter ahead of time and refrigerate it. Or, you can make the crepes ahead of time and individual freeze them to heat and eat later. These crepes make a great weekday breakfast or a weekend treat. Here’s the recipe for my Banana Nutella Crepes:

Banana Nutella Crepes

Ingredients
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup all purpose flour
  • 1/2 tbsp sugar
  • a pinch of salt
  • 1/4 tsp vanilla extract
  • 2 tbsp butter, cut into cubes
  • 2 bananas, sliced
  • Nutella
  • Powdered sugar (optional)
Instructions
  1. In a medium bowl, whisk the eggs and milk together.
  2. Add the sugar, vanilla and salt and whisk until combined.
  3. While still whisking, add flour slowly until completely incorporated into egg mixture.(You can also just put all of the ingredients into the mixer and blend until smooth).
  4. Preheat a small frying pan or skillet.
  5. Add a cube of butter and allow it to melt, coating the pan.
  6. Add a 1/4 cup of the batter to the pan, swirling it around until the pan is coated with the batter.
  7. Cook for one minute until slightly brown.
  8. Using a heat resistant spatula, flip the crepe and cook on the other side for another minute.
  9. Repeat with the rest of the batter.
  10. You can keep the other crepes warm by laying them on a parchment lined baking sheet in a warm oven (150 degrees F).
  11. To assemble your crepe:
  12. Spread the Nutella onto one half of the crepe.
  13. Placed a few slices of banana on top of the Nutella.
  14. Fold the crepe in half, and then in half again to form a triangle.
  15. Another way to assemble the crepe is to spread the Nutella down the middle and placed the slice bananas on top. Then, roll the crepe into a log.
  16. Sprinkle with powdered sugar and serve.
