Strawberry Cheesecake Bars

 

Have you ever looked in your refrigerator and wondered to yourself “Well that’s going to go bad soon if I don’t use it?” Well sadly this happens to me too often. I buy tons of fruits and veggies but Kaylee and I are left eating them all (Kenny hates fruits and veggies. Classic male). We try so hard to get through them before they go bad but sometimes we don’t succeed. This week I bought these beautiful strawberries. I tried using them in everything from pancakes to oatmeal. I even made some chocolate covered strawberries for myself (yum!). I had a few left over that I really wanted to use before they went bad. I looked through the cupboards and the refrigerator and decided that I had all of the ingredients to make cheesecake. But cheesecake is no fun so I made bite sized strawberry cheesecake bars. The recipe is pretty easy and fairly quick. The best part is, the strawberry topping can easily be substituted for any other berries or fruit that you need to get rid of. Ripe fruit works best. You can even use thawed frozen fruit. I hope you try it out for yourself!

Strawberry Cheesecake Bars

Ingredients
  • Crust:
  • 2 1/2 cups graham crackers (crushed)
  • 1/2 stick butter (melted)
  • Cheesecake Batter:
  • 1 8oz pkg cream cheese
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/4 cup white sugar
  • Strawberry Topping:
  • 3 cups diced strawberries
  • 1 tbsp white sugar
  • 1/4 cup water
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a small bowl, mix the graham crackers and the melted butter. The consitancy will be like wet sand.
  3. Spread the graham cracker mixture into the bottom of your baking dish. I used an 11×7 pyrex.
  4. Bake for 10-15 minutes until the crust has browned a bit.
  5. In a small saucepan, add strawberries, sugar and water and simmer over low heat for 15 minutes. This will reduce the strawberries to a compote so you can spread it over the top later. Remove from heat and set aside to cool.
  6. In a medium bowl, beat the egg.
  7. Add the cream cheese, sugar and vanilla.
  8. Mix with a whisk until the mixture is smooth.
  9. Pour over the baked crust and bake for 25 minutes.
  10. Remove from oven and allow the cheesecake to cool completely before adding the strawberry topping.
  11. After the cake has cooled, slice into bars and serve.
